Coffee is definitely a part of our daily routine. Either for a morning kick or an afternoon boost, we drink this delicious drink more than once in a day. Being a cake lover and a keen coffee addict myself, i wanted to combine these two. In this post i will give you all the details of making a tender and delicious coffee cake. What is Coffee Cake, and Why Does it Matter?


Accoring to Wikipedia, #Coffee #cake is cake flavored with or intended to be eaten with coffee. British coffee cake is a sponge flavoured with coffee. They are generally round and consist of two layers separated by coffee flavoured butter icing, which also covers the top of the cake.

This is a different Recipe

This recipe is different than the common coffee cake. Although It doesn’t require an icing to enjoy, you can always experiment combining your favourite buttercream with it.

This recipe is super easy to follow for all the home bakers.

How to Make a Coffee Cake ?


Why not to use an authentic Turkish Coffee

Ingredients


  • 4. Large eggs

  • 1 ½ cups castor sugar

  • 1 cup milk

  • 1 full teaspoon Espresso

  • 2 full teaspoons Turkish coffee

  • 1 full teaspoon instant coffee

  • 2 ½ cups flour

  • 1 teaspoon Baking Powder

  • 1 tsp. Vanilla bean paste / extract

  • 2 tablespoons dessicated coconut

  • ¾ cup sunflower oil

Preperation

  1. Prepare your pan and heat the oven to 175°C

  2. Mix all the dry ingredients in a bowl and set aside.

  3. Whisk eggs and sugar until creamy and double the volume.

  4. Add milk and oil into the egg mixture and whisk..

  5. Add the dry ingredients and whisk until all the mixture combines.Do not overwhisk.

  6. Pour the batter into the pan and bake for 45-50 mins.

  7. When baked allow to cool in the pan for 15 mins and turn onto a wire rack to cool completely.

Tips

  • After adding the flour do not over mix the batter, otherwise you’ll end up with a dense cake.

  • Keep an eye on your cake after 35 mins, baking time might vary depending on your oven temperature.

  • Test your cake using a skewer or a cake tester.
